Oysters

I could eat my weight in oysters! Oysters on the half shell, steamed, roasted, oyster shooters, it doesn't matter. Love 'em!

It is one of the great joys of the Lowcountry, standing around a big wooden table in the cold of fall and winter, hot oysters being dumped out on the table, knives in hand popping open the shells and revealing that briny goodness, all the while laughing and conversing with friends, making sure you get every single oyster in the cluster. You finish with that cluster, drop the opened shells through the hole in the middle of the table and into the bucket below, take a swig of beer and grab the next. I always seem to be one of the last ones to leave the table.

I took this shot on windy and cloudy morning, way up a tiny creek. I was as far back as I could get in the boat and was shocked to find the bottom hard sand. I walked on through the water not thinking about shooting, when I came across this jackpot of oysters. The wind whipped the grass around as I made my exposure and I think it adds a lot to the shot.

Before leaving, I filled up a cooler. You can't imagine how good oysters are right out of the creek!
